These Muesli Breakfast Bars are perfect for on-the-go or for a healthful snack anytime.
The original breakfast cereal called muesli — a German word meaning “mixture” — combined rolled oats with nuts and fruit.
Muesli Breakfast Bars

Ingredients
- 2½ cups old-fashioned rolled oats
- ½ cup almond meal (flour)
- ½ cup fat-free dry milk
- ½ cup golden flax
- ½ cup sliced almonds
- ½ cup zante currants (may substitute raisins or craisins)
- ½ teaspoon salt
- 1 cup honey
- ½ cup natural unsalted almond butter (may substitute peanut butter)
- 1 tablespoon olive oil
Directions
- Preheat the oven to 325 F.
- Lightly coat a 9-by-13-inch baking pan with non stick cooking spray.
- In a large bowl, combine the oats, flour, dry milk, flax, almonds, currants and salt. Stir well to blend and set aside.
- In a small saucepan, stir together the honey, almond butter and olive oil over medium-low heat until well blended. Don't let the mixture boil. Stir in the vanilla.
- Pour the dry ingredients into the prepared pan.
- Add the honey mixture and stir to combine.
- Grease the palms of your hands with a bit of olive oil and pat down the mixture pressing firmly
- Bake for 25 minutes or until the edges start to brown.
- Let cool in the pan on a wire rack for 10 minutes, and then cut into 24 bars. When just cool enough to handle, remove the bars from the pan and place them on the rack to cool completely. Store the bars in airtight containers in the refrigerator.
My craze these days have been energy bites, protein bars and smoothies. I found that lately I was craving a little something mid morning and finding my way at the coffee shop in my office building and ordering a latte and something sweet. The coffee was bringing back my heart. You see, I gave up coffee at the beginning of the year. That dreaded heartburn meant I had to stop with the coffee already. I figured that if I didn’t go for that cup of Joe mid morning than I wouldn’t need to buy that little something sweet either.
That’s when I figured I needed to make my own healthier version of a breakfast bar. Easy to grab a bar and add it to my lunch box for that perfect mid morning snack.
This version using honey and raw almond butter as my sweetener of choice worked out perfect.
These bars came out moist and chewy. I really can’t wait to make another batch again soon.
