Ingredients
  • 16 ounces skinless, boneless chicken breasts (either pounded or buy the thin cut)
  • ½ teaspoon Salt
  • ¼ teaspoon ground pepper
  • ¼ cup flour (I use Wondra)
  • 2 Tablespoons extra-virgin olive oil
  • 2 shallots, finely chopped
  • ½ cup Marsala Wine
  • 1 cup chicken broth
  • 2 tablespoons butter
  • 1 Teaspoon Kitchen Bouquet
Directions
  1. Lightly season the chicken on both sides with salt and pepper, then coat with the flour, shaking off any excess.
  2. In a large skillet, heat the 2 tablespoons olive oil over medium-high heat. Add the chicken and cook until golden and cooked through, 3 to 4 minutes on each side.
  3. Transfer to serving plates to rest.
  4. Add the shallots to the skillet and cook until just translucent, about 1 minute.
  5. Pour in the wine and cook, stirring up the browned bits from the bottom of the pan, until reduced and thickened, 1 to 2 minutes.
  6. Pour in the chicken broth and boil until reduced by half, about 2 minutes.
  7. Add the Kitchen Bouquet.
  8. Turn off the heat and stir in the butter and any juices from the resting chicken.
  9. Spoon sauce over the chicken.

I don’t know about you, but weeknights I try to stick with easy.  Well actually, I stick with easy all the time.  I just don’t have the time or the patience to spend hours laboring over a dish.  And I gotta tell ya, there is nothing better than smothering onions, or in this case, shallots on top of chicken.

I use a Marsala Wine to glaze the pan.  It’s sweet and pairs perfectly with the mild flavor of the shallots.

This rich, classic pan gravy adds the perfect finishing touch this Smothered Chicken dish.I watched as the hubby devoured this dish.  Hey, I just realized that I hadn’t told all of you that we are one step closer to being empty nesters.  One of the boys just moved out.  His twin is finishing up college in May and they will be living together.  That leaves my baby girl still living at home.  Or should I say, housing her stuff.  She is never here and spends every waking hour with the BF.  But it’s all good. He is a great guy and she deserves nothing but the best.  She had a rough relationship about four years ago with a controlling BF, but that’s a story for another day.

Anyway, back to these smothered pieces of delicious chicken.  I still make the same amount of food for about four people.  The leftovers make great hot lunches to take to work.

It does seem rather lonely without the “Bo”.  It’s rather like a double-edged sword.  Great to see him become independent, yet yearning to keep him around.

Oh well.  It is the life cycle of parenting.
