Ingredients
  • 3 large bananas
  • 2 Tablespoons unsalted butter
  • 2 Tablespoons dark brown sugar
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon freshly ground nutmeg
  • pinch of Kosher salt
  • 2 Tablespoons bourbon (or dark rum)
  • matches or a lighter
Directions
  1. Cut the bananas in half cross wise and then length wise.
  2. In a large saute pan combine the butter, sugar, cinnamon, nutmeg and salt.
  3. Heat on medium low and melt the butter sugar mixture.
  4. Add the banana slices to the pan and spoons some sauce over them.
  5. Cook for about 3 minutes.
  6. Turn them over and cook another 3 minutes.
  7. Remove pan from heat and add the bourbon (or rum)
  8. Return to the heat and using a lighter, light up the sauce to flambe the bananas.
  9. Once the fire dissipates, they are ready to be served.
  10. Serve with whipped cream of vanilla ice cream or gelato.

When I was asked to review a new cookbook by Audrey John entitled Lose Weight by Eating, I knew I had to give it a try. The premise for this book is clean eating recipe makeovers for guilt-free comfort food.  I was amazed by all the absolutely wonderful recipes that I can make and eat while losing weight too.  Usually I only find three or four recipes from one cookbook.  I have 14 recipes bookmarked.  I have already tried 4 recipes in one week.  There are no crazy, unusual or hard to find ingredients.  There are beautiful photos, and easy to follow directions. The author has successfully lost weight and kept it off as proof that these recipes can help you lose weight the clean eating way.
